The Los Nogales Low-Caff process, developed by Oscar and Angie Hernández, is one of the most technically innovative coffee decaffeination methods currently used. This method reduces caffeine right at the farm, using natural substances from the coffee cherries itself to remove between 75–97% of the caffeine. What makes it different from typical decaf coffee is that everything needed for the process comes from the same coffee harvest, making it a more self-contained and farm-based approach.

Finca Los Nogales is a coffee farm in Bruselas, a small town in Colombia’s Huila region, and has been in the Hernández family for decades. It first became well known when Oscar Hernández’s father, Ricaurte Hernández, won the Colombian Cup of Excellence in 2006. Today, Oscar runs the farm and has turned it into a place focused on experimentation and new ideas. Los Nogales stands out for combining science with coffee growing and processing to push quality and innovation forward.

How to Brew

Grind

25 grams of coffee ground medium

Water

400 grams of 205*F water

Brew

Pour 50 grams of water to start. After 30 seconds, pour to 200g. At 1:00, pour to 300g. At 1:30, pour to 400g. Finish at 3:35.

Dose

18.5 grams of finely-ground coffee.

Yield

42 grams of espresso.

Can this item be returned?

For safety, coffee and tea products cannot be returned. Gift cards are also considered final sale items and cannot be returned. Brew gear, apparel, or other non-perishable products, can be returned for a full refund as long as the items are unused and within 30 days of delivery. To start a refund, email us at info@methodicalcoffee.mom and we'll get you taken care of.

What if my package is delayed?

Sometimes our shipping partners experience delays due to weather, heightened demand, technical issues, pandemics, or aliens. All of which is out of our hands, except the aliens, but that's not for here.

If your package is delayed, let us know and we'll track it down and escalate its delivery. If it's delayed more than 2 weeks past the shipment date, and your order includes coffee, we'll either refund your money or ship you fresh coffee at no cost.

Can my coffee be ground?

By you? Yes. By us, sadly, no. Currently, we can only ship whole-bean coffee.

When will my order ship?

Freshness is critical to fully enjoying coffee. We roast to order to ensure your coffee is at peak freshness when it arrives. We roast to order and ship Monday-Thursday. Orders are usually fulfilled the production day after they are placed (for example, orders placed on Monday will ship on Tuesday). Orders placed Thursday-Sunday will be fulfilled and shipped on Monday.
