Cherries are floated and hand-sorted to select only ripe fruit, then undergo a two-stage fermentation. First aerobic for 12 hours to develop fruity characteristics, followed by a week-long anaerobic process in sealed tanks. The coffee is then dried on raised beds for 5–6 weeks to reach optimal moisture, and finally rested in GrainPro bags before milling and export.
