The E.A. process includes soaking the unroasted coffee in a solution of water and Ethyl Acetate (E.A.). Ethyl Acetate begins with sugar cane that is turned into molasses. The molasses is then fermented to create ethanol and processed with acetic acid to create the Ethyl Acetate that will be used in the extraction of caffeine. Ethyl Acetate is used extensively in food and is known for bringing a fruity flavor to: hard candy, chewing gum, ice cream, and other products. It can also be naturally occurring in fruits (pineapple, berries, apples, and pears), and is a key to the flavor of rum. The unroasted, green coffee is soaked in the E.A. solution which bonds to the caffeine, extracting it out of the bean. Once all the caffeine is removed, the bean is steamed to remove residual E.A., and voila! You’ve got decaf!\u003c\/p\u003e\n\u003cp\u003eThis particular coffee is grown in La Unión, Nariño, Colombia which is a diverse region in the southwestern corner of Colombia. Coffee production and farming in Nariño is predominantly done by smallholder producers and La Unión has become a key area to optimize transportation and accessibility to directly purchase parchment from producers around northern Nariño. The coffees used for this lot are all fully washed, picked during the day, and pulped in the afternoon on each of the individual farms before the decaf processing happens at Descafecol in Manizales, Colombia.\u003c\/p\u003e\n\u003cp\u003eWe’ve selected this coffee as one of our decaf options because of its meticulous cultivation and decaffeination. We’ve roasted it to bring out its best qualities and to suit a great many taste buds. Located in northern Uraga in the Guji zone of Ethiopia, the 1,841 smallholder members of the Layo Teraga cooperative grow coffee in gardens around their homes in semi-forested environments at staggeringly high elevations of 2,342 MASL (meters above sea level).\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eFarmers pick their ripe cherries and deliver to the Layo Teraga washing station where they are pulped and undergo a single fermentation of just 45 hours. The beans are then spread on raised beds to dry for 12 days before being prepared for export. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWe selected this coffee from a tasting kit \u003c\/span\u003efrom our importing partner, Crop to Crop, who's been working with Layo Teraga since 2013. This coffee stood out to us due to it being such an approachable Ethiopian coffee. The 10-hectare farm sits at 1,900 masl, with 7 hectares planted with 18,000 coffee trees, primarily San Salvador, Sarchimor, and Colombia F6, along with young Sidra plants. After his father’s farm was devastated by rust disease, Segundo took over part of the land, reviving coffee production and continuing the family tradition. Eager to innovate, he began experimenting with extended fermentation and, more recently, Honey Lots.
