The crop, consisting of half Bourbon and half Caturra varietals, is shade grown and then sorted and milled at Transcafe’s mill at Caserio Teogal Adea San Martin. The unroasted green coffee is soaked in the ethyl acetate solution which bonds to the caffeine, extracting it out of the bean.
